As Pastry Chef of Tamarind of London, Mark Medina has single-handedly transformed the high-end Indian restaurant’s dessert menu.

Chef Medina Tamarind-26Medina’s culinary career started as a side job while working in the I.T., banking and finance industries. His passion for food and culinary arts drove him to start a small catering company, which gave him a creative outlet to cook and further fuel his passion for fine food. Medina eventually left the corporate world behind to pursue culinary arts full-time. A graduate of The School of Culinary Arts Le Cordon Bleu Program with honors, Medina has worked in various cuisines from farm-to-table restaurants to four-star hotels serving high profile and celebrity events.

At Tamarind of London, Medina’s mouth-watering menu items put a spin on traditional Indian desserts, turning them into exquisite delights. Medina’s philosophy is simple: create desserts that utilize the freshest and finest ingredients available pulling from traditional recipes and incorporating modern techniques to create a fresh, up-to-date dessert experience.
